Ünnepeljük együtt a Dimitrovdent! Magyar-Bolgár Gazdasági Kamara, a Magyarországi Bolgárok Egyesülete, a Bolgár Országos Önkormányzat, a Bolgár Kulturális Intézet, a Bullgarden Étterem és a Bolgár Borok Nagykövetsége szeretettel vár minden érdeklődőt egy ünnepi lakomára! Az esemény díszvendége Tancho Janchev atya, a Magyarországon működő Bolgár Ortodox Egyházi Közösség lelki vezetője. Bulgáriában a Dimitrovdent (Demeter-napot) október 26-án ünneplik Szaloniki Szent Demeter tiszteletére. Elhozzuk a bolgár kolostorok és rejtett hegyi falvak egyik ősi receptjét, a tradicionális Kakaspörköltet pópák módjára (Попска яхния / Popszka jahnija). · A hagyma szimbolikája: A klasszikus receptben kötelezően szereplő apró, egész hagymafejeket bolgárul stílusosan „pópahagymának” (попски лук / popszki luk) nevezik. Természetesen a fogáshoz illő, tüzes bolgár borok sem hiányozhatnak! The Hungarian-Bulgarian Chamber of Commerce, the Association of Bulgarians in Hungary, the Bulgarian National Self-Government, the Bulgarian Cultural Institute, Bulgarden Restaurant and the Bulgarian Wine Embassy cordially invite everyone to a festive feast! The guest of honour at the event is Father Tancho Yanchev, the spiritual leader of the Bulgarian Orthodox Church Community in Hungary. In Bulgaria, Dimitrovden (St. Demetrius's Day) is celebrated on 26 October in honour of Saint Demetrius of Thessaloniki. According to folk belief, this day marks the beginning of winter and the cold half of the year, as the popular Bulgarian proverb goes: ‘Saint George brings summer, and Saint Demeter brings winter.’ To mark the occasion, we invite you on a true gastronomic journey through time! We’re bringing you an ancient recipe from Bulgarian monasteries and hidden mountain villages: the traditional Priest's Rooster Stew (Попска яхния / Popska yahniya). What makes this dish so special? The soul of the dish lies in endless patience and slow, gentle cooking. The rooster’s distinctive, deeply flavoured meat is slowly braised to perfection with plenty of whole, sweet pearl onions, authentic Bulgarian chubritsa (summer savory), and high-quality, full-bodied red wine. Over several hours, the flavours blend perfectly, and the meat becomes divinely tender, almost falling apart in a thick, silky sauce. Cultural notes on the dish: · Monastic origins: The dish originated in monastic kitchens. During long church services, priests and monks would leave the pot to simmer quietly in the oven for hours, letting the meat braise with wine from their own estates, plenty of garlic, onions, and herbs. · The symbolism of the pearl onions: The small, whole onion heads essential to the classic recipe are traditionally referred to in Bulgarian as ‘priest’s onions’ (попски лук / popski luk). According to folk belief, these small onions symbolise the beads of a priest’s rosary. This is not just a dinner – it is the ultimate, most heart-warming culinary experience on this chilly October evening. Of course, the fiery Bulgarian wines that complement the dish are a must! Wine lovers can order to their heart’s content – even by the glass – from a selection featuring the special Mavrud, Gamza, Rubin grape varieties. To round off this sumptuous feast, a sweet autumn surprise awaits you at the end of the dinner, prepared by the restaurant’s chef based on a traditional recipe.
